Doffo Winery believes that good winemaking begins in the vineyard. At the Doffo Vineyards, we grow Cabernet Franc and Cabernet Sauvignon varietals. In honor of this year’s Cabernet Day, we’d like to share some facts about these delicious grapes and the fine wines they produce.

Cabernet Franc is a thin-skinned red grape that originated in the Bourdeaux and Loire Valley regions of France. These grapes are ideal for blending with other varietals such as Merlot and Cabernet Sauvignon but Cabernet Franc can also stand alone as a single varietal. It produces wine with spicy aromas, and peppery accents. Additional aromas can include tobacco, raspberry, bell pepper, cassis and violets.
Cabernet Sauvignon is the most famous red wine grape in the world. It was accidentally created in the 17th century when French wine growers crossed Cabernet Franc and Sauvignon Blanc grapes. It made for a unique grape with special flavors and tough, thick skins that made it easier to grow.
Cabernet Sauvignon produces wines with deep, dark colors that offer complex scents and concentrated flavors ranging from blackberries, cassis, black cherries, boysenberry, blueberry and chocolate when young, to fragrances of tobacco, truffle, cedar wood, earth, lead pencil and leather when mature.
- Food Pairings
Steak and red wine may sound like an obvious food pairing but it is on point when you’re considering the complex full-bodied flavor of a Cabernet Sauvignon. Here are some other foods you can try: a good burger, beef short ribs, braised lamb or even a mushroom pizza.
Meanwhile, the Cabernet Franc varietal tends to produce an earthy medium-bodied wine, which may also pair well with meat but you can also try it with poultry, lamb.
