When leading guests through wine tastings, we are often asked what makes a reserve wine different from a non-reserve wine. The truth is, there is no universal definition for wines labeled “reserve,” but here at Doffo we use only the best fruit from our vineyards and allow our reserve wines to age in their barrels longer than our other wines. For instance, most of our non-reserve wines like our Zinfandel and Malbec are aged in oak for around 18 months, while the reserves spend up to a full 4 years in their barrels! The resulting wines are richer and more complex, worthy of saving for special occasions or no occasion at all!
