Welcome to our Featured Wine series! Each month Damian will profile a Doffo wine, giving you a little bit of back story about the winemaking process, what to expect when you taste it, and what kinds of foods to pair it with. We hope you enjoy and visit us soon to learn more about our handcrafted wines! June is a double feature month, as we will profile our two newest wines that are included in this month’s Doffo Wine Club shipment: 2013 Mistura & 2014 Cabernet Sauvignon.
We’ll start things off with our 2013 Mistura. This is a highly anticipated release as our 2012 Mistura has been sold out for some time. This was the first wine we ever made with the grapes from our own vineyards, and to this day it continues to be one of our signature creations. We craft this wine as a field blend with our original Cabernet Sauvignon and Syrah blocks, with a ratio of 60% Cab to 40% Syrah.
This explosive combination of fruit creates a full-bodied blend that is full of texture, with hints of blackberry, currant and black pepper.
Mistura will appeal to those who have just begun to appreciate red wines. It’s versatile when it comes to pairing, but you can’t go wrong with a classic filet mignon and sides to your liking.
We recommend cellar aging this wine for a couple of years, but if you can’t wait that long then we encourage you to share a bottle or two with some loved ones. Click here to order the 2013 Mistura online.
Not to be outdone, our 2014 Cabernet Sauvignon is a blockbuster of a wine! This single lot Cab is clone 337, known for producing big fruit-forward and full-bodied wines. The 2014 is no exception.
Right away, this classic example of a Cabernet Sauvignon entices the senses with its deep ruby red color. Hints of cherry and plum are underlined by a slight peppery tone. The first sip delivers ripe blueberry and boysenberry intermixed with hints of clove and vanilla. There are plenty of robust tannins on the mid-palate before finishing nicely.
When it comes time to pair this Cab with a meal, consider braised lamb shanks or sear tri-tip steak. Not too fond of meat? Try a wild mushroom risotto or vegetarian lasagna.
This wine is ready to drink, but as with most big reds a year or two of cellar aging will help to enhance the flavor profile and balance of this wine. Click here to order the 2014 Cabernet Sauvignon online.
